Instant Bread Mix

I don't have a breadmaker but I see so many bread recipes that can be made without using one. I have always wanted to bake bread and the thought of the smell of bread baking in the kitchen is just so nice. I have a box of instant yeast but never got around to actually baking the bread.


So when I found this instant bread mix at Mercato, I decided to give it a try. I like the fact that you can make this bread even without using a breadmaker.

 I just followed the instructions on the box. Once the dough is mixed, I left it to rest and double in size.

After that, I transferred the dough on a baking tin lined with parchment paper and baked it in the oven, according to the instructions.
This was after the bread was done baking. It looked just like those in the bakeries, don't you think?

The next day, I cut the bread into small pieces and put a cheese slice, some tuna and salad and brought it to office for lunch.

Fluffy Pancakes

Who doesn't love warm fluffy pancakes for breakfast, right? One weekend I woke up and felt like eating pancakes so I quickly googled for a recipe online. You may think 'Come on, why would you google something simple like a pancake recipe??" Let me tell you why. Because I no longer buy store-bought pancake mix which contains God-knows-what yet I want the same fluffy pancakes like the store-bought ones. Geddit?
So I went into the kitchen and started preparing the batter and one after another my pancakes came to life, all fluffy and pillow-y.



Instead of stacking them up, I arranged them in a sircle resembling flower petals and I put a bunch of frozen raspberries in the middle. Ta-daa! My very own flower pancakes. Nothing fancy, I know. 

I also had some bananas that morning so I cut them into pieces and arranged them like the above for babycakes. Not the cutest pancake I've ever seen. In fact, it looks a bit scary, doesn't it? LOL. We had them with butter and honey and we were good for the weekend.
Go ahead and google yourself a pancake recipe. Everything is at your fingertips. Honestly the reason why I didn't share the link here is because I googled it on my handphone and I've cleared the history. However I have already written the recipe in my scrapbook. By the way, this recipe didn't use any milk powder. It calls for buttermilk and I even made my own buttermilk simply by mixing milk with vinegar. Now don't be lazy. Go google yourself how to make buttermilk. And pancakes. Trust me, you won't want to buy the store bought ones anymore after this. Unless you're really very lazy, of course.
